Abstract/Objectives
Food literacy is the ability to “read the world” with food, thereby reinventing food and ourselves. It involves a complete understanding of the life cycle of food – where it’s grown, how it’s produced, who gains and who loses when it’s purchased, who has access (and who can’t), and where it goes when we’re done with it. It includes an appreciation of the cultural significance of food, the ability to prepare healthy meals and make healthy decisions, and an awareness of the environmental, social, economic, cultural and political influences of these decisions. This course explores "deep food design" and seeks creative ways to convey the concept of food sustainability through design, thereby enhancing the dietary literacy of dining participants.
Results/Contributions
The outcomes of this course are as follows:
1. Students can think critically about the impact of food chains and human eating behaviors on a sustainable earth.
2. Students have the ability to conduct field observations and gain knowledge about diet, local customs and local food systems.
3. Students learn design thinking and food design methods and convey the concept of sustainable diet through food curation.
