Abstract/Objectives
Today's eating habits are very different from those of our parents' generation. Modern agriculture and food production have brought about revolutionary changes in today's eating habits. A series of food safety storms in recent years, coupled with the excessive and mixed dietary health information in the media that makes it difficult to judge, have caused the Chinese people to be alert to the collapse of the food safety defense line, and they have deeply felt the importance of dietary education. This course is jointly taught by the four universities of Taiwan, and brings together food-related experts and scholars from National Tsing Hua University, National Central University, National Yang-Ming Chiao Tung University, and National Chengchi University. It approaches food safety, food processing, ecological environment, resource media, law, food and agriculture education, etc. from different aspects, constructs a comprehensive and holistic perspective, and analyzes the diverse thinking on food safety.
Results/Contributions

The final project of this course is a themed practice. Students work in groups to choose a food and compare the differences between school meals, convenience stores and DIY (flavor, price, time, quality of ingredients, food safety concerns and nutritional value, etc.). From the students' reports, we can see that the students have achieved the following learning outcomes:

1. Have basic knowledge of diet and lifestyle

2. Have the ability to correctly judge food safety information

3. Have the ability to choose the right food and support the actions of friendly farmers.
