Science of cooking

In this class, we start from the composition of food, cooking science, molecular gastronomy and machine learning for cooking, extended to establishment of food culture, food safety and security and environmental sustainability. Student will design their own recipe use the technique of molecular gastronomy or machine learning for cooking. They can use this new cooking technique learning how to design a new, good to health dish or vegan dish. The figure are from part of the student’s report.
